ANCIENT HARVEST QUINOA PILAF

Directions from the box of Ancient Harvest Quinoa.

Ingredients

      1 c Quinoa cooked in 2 c water
      1/2 c carrots, diced
      1/2 c green onion, diced
      1/4 c celery diced
      1/4 c green bell pepper, diced
      1/4 c red bell pepper, diced
      1/ 4 c olive oil
      2 cloves garlic, crushed or 1/2 dried, minced
      1 c almonds, sliced
      1/4 tsp Oregano

Directions

Cook the Quinoa in water in a saucepan and bring to a boil. Reduce heat and simmer, covered, until all water is absorbed–about 10 to 15 minutes. Fluff with fork before using in recipes.
Saute vegetables and garlic in olive oil until vetables are crisp. Add oregano. Add this mixture to the Quinoa and mix well. Add almonds. Serves 6.
Note: if you leave out the almonds each serving goes down from about 300 calories to about 209 calories.
If you stretch this to serve 8 (as is) it will be about 225 calories per serving.Number of Servings: 6
